Sunday Afternoon Tea – Lemon Drizzle Cake

Is no secret by now that I like to bake and cook on Sundays, now that I know that I can actually manage not to burn down my kitchen. Last Sunday was no exception. After watching Tanya and Zoella’s Lemon Drizzle Recipe, I knew I had to give it a try. My friend Claudio and I are massive lemon cake lovers, so I had him coming over for a little backing sesh. It was hilarious, and widely appreciated by our friends that came over later for a cuppa.

The recipe is very simple and quick, and boy, is hard not no put your head in the batter whilst cooking!

INGREDIENTS for a loaf:

3 eggs
170g Self Raising Flour
170g Caster Sugar
170g Butter
1 tsp Baking Powder
110g Icing Sugar
2 lemons

METHOD:

Mix together the eggs, flour, sugar, butter, baking powder and the zest of two lemons. Pop into a tin and bake in the oven (set to 180 degrees celsius) for 30-45 mins. Cooking time depends on the size of your loaf and what your oven is like. The best way to test if your cake is cooked is to carefully slide a knife into the centre and if it comes out clean with no cake batter on then the cake is cooked! Whilst the cake is still hot, poke it all over with a skewer then pour on the drizzle. The drizzle is made by mixing together the icing sugar with the juice of 2 lemons.

We had SUCH FUN baking together while watching Tanya and Zoe. That video is super cute and fun, with them trying to keep it together. Best bit, Tanya slow-motion’s scream!

For what concerns mine and Claudio’s loaf, the above pictured loaf, lasted 5 hours!
